Mango Cheesecake

1 small box lemon gelatin
1 cup miniature marshmallows
24 ounces cream cheese
4 ounces Cool Whip?
1 1/2 cups mango pulp
1 (10-inch) graham cracker pie crusts

Pour gelatin into a large mixing bowl. Pour 1 cup boiling water over gelatin. Stir until gelatin is completely dissolved. Add marshmallows stir well until they are completely dissolved.

Soften the cream cheese by microwaving it for 2 minutes. Add cream cheese to the gelatin mixture. Add whipped cream and mango pulp to this mixture and stir well. Blend the mixture in a mixer or food processor for 2 minutes. Pour the batter into the pie crusts and refrigerate for 4 to 6 hours. Serve chilled.

      Raspberry Ice Cream

      1 small box raspberry gelatin
      1/2 cup boiling water
      1 (10 ounce) package frozen raspberries, thawed and sieved
      2 eggs
      1 cup whipping cream
      1 (3 3/4 ounce) box instant vanilla pudding mix
      2/3 cup granulated sugar
      2 teaspoons vanilla extract
      1 quart milk

      Dissolve raspberry gelatin in boiling water. Stir in sieved raspberries.

      Beat eggs. Add whipping cream, dry pudding mix, sugar and vanilla extract. Stir into raspberry mixture. Pour into 1 gallon ice cream freezer container. Add milk and stir until blended. Freeze according to freezer manufacturers directions.

      Makes 2 quarts.

      Fluffy Cheesecake

      Crust
      1/2 cup (1 stick) butter
      22 finely crushed graham crackers (2 cups)

      Filling
      1 small box lemon gelatin
      1 cup boiling water
      1 cup granulated sugar
      3 ounces cream cheese
      1 small can crushed pineapple, drained
      1 large can evaporated milk (almost frozen)
      Juice of 1/2 lemon

      Melt butter and add graham crackers. Press all but 1/2 cup of this mixture in a 13 x 9-inch dish.

      Dissolve gelatin in water; cool. Cream sugar and cream cheese (a little of the cooled gelatin makes this easier). Whip canned milk, adding lemon juice; beat until very stiff. Mix gelatin and cream cheese mixture together. Add pineapple. Fold in whipped milk mixture. Pour into crumb-lined dish. Sprinkle remaining crumbs on top, adding 1/2 cup finely chopped nuts if desired. Chill.

          Raspberry Ice Cream Pie

          1 small box raspberry gelatin
          1 2/3 cup hot water
          1 tablespoon lemon juice
          1 pint vanilla ice cream
          1 cup crushed raspberries

          Dissolve gelatin in hot water and lemon juice; chill until partially set. Beat the vanilla ice cream into the gelatin mixture, then fold in the crushed raspberries. Pour chilled filling into cool, baked 9-inch pie shell. Chill pie until firm (about 1 hour).

          Decorate pie with whole raspberries and whipped cream.

                  1 tablespoon granulated sugar
                  The Christian Brothers? La Salle Ros? Wine
                  1/2 cup whipping cream, stiffly beaten

                  Thaw berries; drain juice into measuring cup. Add enough La Salle Ros? to measure 1 1/2 cups; heat to boiling. Add gelatin and sugar; stir to dissolve. Cool until slightly thickened; beat until fluffy. Fold in whipped cream and raspberries. Spoon into serving dishes; chill.

                  1 1/2 cups flour
                  1 cup (2 sticks) butter
                  1/2 cup pecan (chopped)
                  1/4 cup brown sugar
                  8 ounces Cool Whip?
                  3/4 cup powdered sugar
                  8 ounces cream cheese (softened)
                  4 cups strawberries (sliced in half)
                  4 tablespoons cornstarch
                  3 ounces strawberry Jell-O
                  1 cup strawberry juice or water

                  Mix flour, butter, pecans and brown sugar. Press on to a pizza pan. Bake for 15 minutes at 400 degrees F.

                  Mix powdered sugar and cream cheese. Put cream cheese in bowl first, then add powered sugar a little at a time. Fold in Cool Whip. Spread on cooled crust.

                  Mix Jell-O and 1/2 cup juice or water. Dissolve cornstarch in the other 1/2 cup juice. Stir into Jell-O mixture and cook until thick. Stir in sliced strawberries. Allow to cool. Pour over cream cheese mixture and refrigerate until cool.

                      Strawberry-Banana Ice Cream

                      1 small box strawberry gelatin
                      1 1/2 cups hot water
                      3 cups granulated sugar
                      3 pints half-and-half or whipping cream
                      Juice of 2 lemons
                      1 package frozen sliced strawberries, partially thawed
                      3 bananas, mashed
                      Milk

                      Mix well the gelatin, water and sugar. Add cream, lemon juice, strawberries and bananas. Add enough milk to finish filling freezer can. Freeze according to freezer directions and allow to set.

                      One small can crushed pineapple is also good in this.

                            2 small boxes raspberry gelatin
                            2 cups boiling water
                            8 ounces cream cheese
                            1 (8 ounce) container whipped topping
                            1 (14 ounce) can sweetened condensed milk
                            5 to 6 cups frozen raspberries
                            Chopped pecans
                            Additional whipped topping (optional)

                            Whip cream cheese, whipped topping together and sweetened condensed milk.

                            In separate bowl combine boiling water and gelatin. Fold 2 mixtures together.

                            Place raspberries into the bottom of a decorative glass bowl. Pour the mixture over raspberries. It almost instantly solidifies. Can refrigerate if not stiff enough. Top with additional whipped topping and pecans.

                                  1 pint softened ice cream

                                  Try using strawberry gelatin and strawberry ice cream, or pair any other gelatin and ice cream you desire. Dissolve gelatin in hot water. At once stir in the softened ice cream. Pour into molds and chill until firm. Unmold and serve with whipped cream. Decorate with fresh fruit.
